You will need about six large passion-fruit for this recipe.
bullet3 teaspoons gelatine
bullet2 tablespoons water
bullet¾ cup passionfruit pulp
bullet½ cup thickened 35% cream
bullet¼ cup castor sugar
bullet2 tablespoons lemon juice

MANGO Coulis:

1 mango, chopped

bullet

¼ cup sugar

bullet

¼ cup water

bullet

1 tablespoon lemon juice

 

 

 

Sprinkle gelatine over water, dissolve over hot water (or microwave on HIGH for about 20 seconds), cool.
Combine passionfruit, cream, sugar and lemon juice in bowl.
Add gelatine to passion-fruit mixture.
Lightly oil 6 egg rings, place on serving plates, pour passion-fruit mixture into egg rings; refrigerate several hours. Remove rings,
serve with Coulis and fresh fruit.
 
Mango Coulis:
Combine mango in pan with sugar and water, bring to the boil, reduce heat, simmer uncovered 2 minutes; cool. Blend or process until smooth, add lemon juice.
