Sprinkle gelatine over water, dissolve over hot water (or microwave on
HIGH for about 20 seconds), cool.
Combine passionfruit, cream, sugar and lemon juice in bowl.
Add gelatine to passion-fruit mixture.
Lightly oil 6 egg rings, place on serving plates, pour passion-fruit
mixture into egg rings; refrigerate several hours. Remove rings,
serve with Coulis and fresh fruit.

Coulis:
Combine mango in pan with sugar and water, bring to the boil, reduce
heat, simmer uncovered 2 minutes; cool. Blend or process until smooth, add
lemon juice. |
